Orange & Tomato Salad

This light salad is pure sunshine on a plate. Bursting with colour and fresh flavours. It combines sweet citrus oranges and savoury lightly picked onions and juicy tomatoes.

Orange & Tomato Salad with Citrus Pickled Onions
Serves 1-2
Prep time | 15 minutes, no cook | Average cost £0.80p per person

Ingredients
3- 4 ripe large oranges, zest, then remove skin and thinly sliced
1 onion, thinly sliced
3-4 large tomatoes, thinly sliced
Juice of 1 lemon
1/2 a red chilli, sliced
splash of apple cider vinegar
Salt & pepper

M ethod
Place sliced onion in a freezer bag and add the orange zest, apple cider vinegar and juice of the lemon and a pinch of salt. tie up and leave for 10 minutes. This lightly pickles and neutralises the onion, so it still has all the flavour but shouldn’t leave that raw onion smell on your breath. Handy if you fancy a snog later in the day!
Arrange the tomatoes and oranges in layers and fill the middle with the onions.
Scatter with chilli, parsley and season with salt and pepper.

This type of orange salad is typical of mediterranean cuisine and would generally be served at the start or end of a meal. Personally though I would serve this with fresh grilled fish or as a delicious accompaniment to any table, particularly for alfresco dining.
