PEA ‘PESTO’ SALMON LINGUINE

This wonderful dish is filling and full of summer flavours.

In this dish I’ve combined the fresh flavours of classic pesto, with a store cupboard classic and nutritious grilled salmon. Delicious!

Potato Rosti Poached Egg Stacks

V // DF // GF // Syn Free

I love potatoes! sweet, mashed, crushed, baked, boiled, grated- yep grated… A potato rosti is a real delight! This one is enhanced with basil, chilli, tomatoes and crowned with soft poached eggs. Great for breakfast or brunch, actually they’d be great for dinner too, or a snack… I’ll just have them all the time thanks!

Butternut Squash Hummus

Vegan / V / GF/ DF/ Syn Free
Liven up a dreary day with this sunny dip

This is a lovely alternative to plain hummus. I love adding to a classics and this one is great for a light snack. Butternut is just going out of season, so it’s the perfect way to use up any that are left. In the absence of butternut, sweet potato would also work well for this too.

The addition of the butternut adds a lift in colour, nutrients and flavour. This is a great quick, healthy dip. It is also vegan, vegetarian (V), gluten free (GF), dairy free (DF) and is syn free on Slimming World extra easy… so enjoy!

Day Bream Believer…

Bream is very versatile, delicious and nutritious.
It can lower bad cholesterol, is abundant in heart-healthy omega-3 essential fatty acids.
It can protects against colon and breast cancer and can also slow down signs of aging.
It also helps uplift the mood as an antidepressant.

I have chosen bream as I think it can be a seriously overlooked fish as people favour cod and haddock (which would work very well in this recipe). Seam bream is a bit more sustainable and it takes the pressure of the other more popular fishes giving stocks a chance to replenish. Why wouldn’t you choose Bream?
This dish a light, yet satisfying dish.
It’s not very seasonal so my apologies, but I had a real craving to make courgette spaghetti and thought bream and pea would be an excellent combination.
