Jams, jellies, chutneys and alcohols are great ways to preserve fruits and vegetables till summer.


Jams, jellies and chutneys are great ways of preserving fruit and vegetables for the whole season and make great gifts. 

Our orchard is full of apples, plums, end blackberries and blackcurrants, elderberries and pears.

The allotments and vegetable patches are packed with squash, marrow, courgette, beans, carrots and more….







To enjoy fruits all year round, freeze some fruit to use another time.  

Apple Jam
A new jam I’m trying- it worked really well, and with some subtle spicing makes a delicious apple treats to enjoy for months.

x 1.5 kg apples, cookers, peeled, cored and sliced
x 1 kg caster or any sugar
x 2 lemons juiced and zested
x 500 ml water
x 2 tablespoon of cinnamon
x 1 tablespoon ground ginger

Put all ingredients except sugar into a persevere pan, cook on low for 20 minutes until fruit has softened.
Add sugar and simmer until dissolved. Turn up heat and rapid boil till setting point is reached (around 15 minutes).

Cool slightly then pot into sterilised jars.
















Plum Jams

Victoria Plum and cinnamon jam
Red plum and vanilla preserve

Use the same method for the Apple jam.

Victoria Plum Jam
x 1 kg Victoria Plums, de stoned and quartered
x 1 kg sugar
x 100 ml water
x 1 tablespoon ground cinnamon, or leave a cinnamon stick in during cooking- remove to pot.








Red Plum and Vanilla preserve
x 1 kg red.purple plums
x 1 kg sugar
x 100 ml water
x 1 tablespoon of vanilla bean paste or split a vanilla pod add beans and leave pod into during cooking-remove to pot.







Berry Jelly
A mix of frozen blackberries and currants were used.

x 1 kg blackcurrants
x 500 g blackberries
x 1.5 kg sugar
x 100-200 ml water( water will come out of the berries from freezing, so you may need to top it up a little)

Use the same method as all the other jams. Except I then strained the jam to make a smooth jelly.














Here are some great ways to preserve fruits for the whole year.

Do experiment with your own flavour and fruit combinations. Or make them into chutneys by adding vinegar.
Some combinations to try would be;

Apple and Blackberry Jam
Hedgerow Fruit Jam
Mixed Berry Jelly
Apple, plum and vanilla
Apple and Pear preserve

So go on spread the love…. but you could also use the jams in puddings, desserts and pastries to make sweet treats.
