A fruit with a lot to give!

So… jackfruit has been a pulled pork substitute for a while now and (better late than never ) I just had to try it. I’m pleased to say it’s fantastic! Possibly even a life changer!
The flesh from the large knobbly green ones is what you’re after. Luckily for us it comes tinned in most good speciality shops. Mine is from YumYum Oriental Foods, Worcester and as the delightful lady told me it’s the young, green flesh in water you need not the ripe one in syrup. So go ahead give it a try.
BBQ Pulled Jackfruit
Prep time 20 minutes
Cook time slow – 2 hours
* Extra easy cheat – 30 minutes
1 can of young, green, Jackfruit
Spice mix: mix then half into two bowls, one portion is for the spice rub and the other half is for the BBQ sauce.
2 tablespoons of brown sugar
2 tablespoons of tamarind (optional)
2 tablespoons of maple syrup
1 teaspoon of smoked paprika
1 teaspoon of cumin
1 teaspoon onion powder
1/2 teaspoon of mustard powder
1/2 teaspoon of garlic powder
1/2 teaspoon of chilli powder
1/2 teaspoon of cayenne pepper
Salt and pepper
Half the above spice mix
1/2 cup passata
1/4 cup apple cider vinegar
1 cup water
1 onion very finely chopped
Or * Pre bought, good quality bbq sauce – Extra Easy Cheat! Naughty!
1/2 onion, very finely chopped
1 small carrot, grated
Small handful of shredded cabbage
1-2 large tablespoons of coyo/soy yoghurt or if not vegan mayonnaise
1 teaspoon of dijon mustard
1/2 onion for crispy onions
Open can of jackfruit and drain.
Remove any seeds.
Add half spice mix to fruit and mix through.
Cook jackfruit on a medium heat for 10 minutes.
Add bbq sauce ingredients to pan. Cook for 20 minutes on hob.
Remove from hob and either transfer to slow cooker for an hour on high or pop in an ovenproof dish for an hour on 170 degrees.
Remove jackfruit and shred/pull apart with forks, return to liquid and mix, you should have a lovely thick yet moist mix. If too wet pop liquid back on hob to reduce down. Pulled BBQ jackfruit done.

Add spice mix to jackfruit and cook for 10 minutes.
Add a cup of bought bbq sauce to fruit and cook for 20 minutes, serve.
During cooking, make coleslaw.
Simply mix finely chopped onion, grated carrot, shredded cabbage and mayo/non dairy product together with seasoning and the dijon mustard. Voilà a delicious crunchy coleslaw.
Build your buns or wraps.
Load them with the bbq pulled pork, coleslaw and cheese, yum!!
Heat oil to very hot and drop in thinly sliced onion. Fry until golden. Take out and drain on kitchen roll.
Jackfruit is a great, high fibre meat alternative. It has endless uses and I cant wait to get cracking on some more recipes!
