This wonderful dish is filling and full of summer flavours.

In this dish I’ve combined the fresh flavours of classic pesto, with a store cupboard classic and nutritious grilled salmon. Delicious!
I’ve have made a lovely little video for you to follow. Which I hope will show you how easy these recipes are.

Pea ‘pesto’ Salmon Linguine
Prep time | 5 minutes
Cook time | 15 minutes

2 hot smoked salmon fillets ( or grill your own for 10-15 minutes under a hot grill)
200g dry linguine pasta
1 can of mushy peas
2 tablespoons of natural fat free yoghurt
½ bunch of basil
1 garlic clove
½ head of broccoli florets
1 teaspoon (20g) of parmesan – use this as ½ your healthy extra A per person but you could leave this out to be super syn free
1 teaspoon of capers (optional)
2 spring onions
Pea shoots (optional for decoration)
Pepper and a little salt

As per video.
Make your pea pesto. Add mushy peas, garlic, basil, yogurt and parmesan to a blender and whiz until well combined and smooth, taste and season. You shouldn’t need  to add much salt as the parmesan and mushy peas account for this. 
Cook linguine as per instructions( usually about 7-10 minutes) Four minutes until pasta is cooked add the broccoli and cook together.
Drain and return to the saucepan. Add the ‘pesto’ and mix well.
Plate up and top with salmon, capers, fresh cracked black pepper, a few basil leaves and optional pea shoots.


I love this pea pesto style sauce. It so light yet completely covers all the pasta. Plus it uses a bit of a store cupboard classic in a nice way. You could also use lovely fresh seasonal peas. Just pop into the boiling water with the pasta for 30 seconds or so just to take the edge off them and mix as per above.
