You won’t be able to contain this croque!

I don’t generally have favourite foods or dishes, but I’d happily eat Croque Madams till the end of days!
What is there not to love?

I’m a big believer in a little bit of what you fancy does you good.
A croque is definitely not a healthy option, so keep this one to an occasional treat. But what a treat it is.
Traditionally made with smoked ham, this is my vegetarian version. I had very similar in Cafe Rouge and loved it so much I had a massive craving to remake it.
The Madame refers to the fried egg on top, if you wanted to omit the egg it would then be a croque Monsieur.

So Madam et Monsieur, crack on and get cooking. you will not be disappointed.

Mushroom Croque Madame
Using seasonal mushrooms and rosemary. Mixed with a rich cheese sauce topped with a fried egg! Ah! Just Ah!Prep and cook time 20-40 minutes
Serves 2

Ingredients
2 large handful of sliced mushrooms
4 pieces of your favourite bread, good white or sourdough is my favourite for this dish
100g butter
35g/1 heaped tablespoon flour
100ml milk
1 teaspoon dijon mustard
30g cheese – any good melting cheese of choice. Gruyere is traditional however cheddar works just as well
2 eggs
A sprig of rosemary

Method
Fry sliced mushrooms with seasoning and chopped rosemary.
Meanwhile make the sauce. In a pan melt butter and add flour.
With a whisk, mix roue for 2-3 minutes on the heat to cook out flour.
Start adding milk, whisking the whole time to make smooth.
Increase heat until sauce thickens.
Take off heat and add cheese and dijon mustard, season and set aside.
Toast bread a little, till slightly golden.
Make a mushroom sandwich ( I also put a little cheese sauce inside- why not) and top with the cheese sauce.
Pop under grill to brown.
Whilst it’s grilling, fry eggs.
When grilled to golden brown, top with fried egg and serve with a little chopped rosemary on top.
This is a total indulgence, but completely worth it once in a while.
