A lightning fast Spinach and Almond Pesto
This is a delicious variation of standard flavoured pesto. This vibrant pesto is perfect to stir through pasta, top grilled fish or to mix with mayonnaise for a yummy dip. Superfood Summer in a bowl!
There’s a reason why spinach is Popeye’s power food of choice. It’s packed full of vitamin K, A and C and a great source of iron and magnesium. This Pesto uses raw spinach too, so you keep as much of the good stuff as possible. Bonus points as spinach is also in season and at its best right now.
Almonds might be higher in fat than lettuce, but it’s the good fats that lower cholesterol and, like olive oil, are health boosting. They are jammed with vitamin E, which is great for luscious locks and nails.
So you are healthy on the inside, glowing on the outside and you get to eat this scrummy sauce all in one go. Wowzers!!
For this one to be super quick and to get a great consistency, a food processor is advised, but you can use a pestle and mortar would work just as well.
My food processor was very inexpensive at £10 from a local supermarket. Or check online shops for used ones which can go as cheaply as 99p!
We’re going a bit more freestyle with the measurements on this one… Go on give it a go…
2 big handfuls of spinach ( baby’s nice and sweet)
1 small handful of almonds (blanched or natural)
1 small handful of parmesan/ vegetarian Italian style cheese, grated (omit to make vegan)
1 clove garlic
1 lemon, juiced
1/4 -1/2 cup oil, enough to create the desired consistency
Salt and pepper
Pop all ingredients except oil into the food processor and pulse until starting to blend.
Add oil as processor is running until a thick dropping consistency is achieved.
Taste, season, done.
