A little filo parcel filled with summer fruits and flavours

Persimmon or Sharon fruit as I know them are unique little fruits. The flavour is somewhere around a peach, and for me the texture is between a pear and melon. They are delicious! Simply take the woody leaves off, peel and enjoy. In this recipe I’ve used filo pastry. It keeps these parcels light and totally vegan too.
Filo Fruit Parcels
Prep time 10-15 minutes | Cook time 5-10 minutes
A packet of filo sheets – I used Jus-Rol
Cooking oil spray
2 persimmon/Sharon fruits
A handful of raspberries
1 tablespoon of sugar
Icing sugar to decorate
Prep and chop Sharon fruit and peaches into slices.
In a frying pan heat a little oil and add fruit, cook for a few minutes until fruit is slightly softened. Add sugar and mix. Add in raspberries and remove from heat. Set aside for a minute.
Spray a couple of holes in a muffin tin with spray oil. Remove filo from the packet and separate 2 sheets. Cut sheets in half. Press sheets into the muffin holes. Fill with fruit filling.
Bring excess sheets together at the press together, The tops should sort of crinkle together at the top. Spray a little oil on top to keep the sheets together and to help crispy up the outside.
Bake in a preheated 200°C for 5-10minutes until outside is golden.
Carefully lift the parcel out with a spoon, sprinkle over some icing sugar and enjoy. These would also be beautiful served with some COYO yoghurt.
