Raw, vegan, gluten free, guilt free treats

After a few weeks of buying, cleaning, fixing and decorating our new pad we are ready to clean and fix our bodies.
My inspiration for these recipes are the vegan, raw, sugar free and gluten free beauties I admire.
I have been trying to go more towards fruit and vegetables and cut down on meat and refined sugars. I started this off with my hardest habit to kick – desserts! I’ve got a cheeky sweet tooth that loves all the naughties.
With this in mind I have seen many delectable raw desserts that look just as good as the sugar filled counterparts and have tried my hand at recreating them. Go on, take a peek!

RAWSOME CAKES
RAW/VEGAN/GLUTEN FREE/LOW SUGAR/LOW GI INGREDIENTS
Base:
1/2 cup pitted dates
1/2 cup dried figs
1 1/2  cup nuts; pecan and/or almonds work best
Middle:
3 cups cashews, soaked overnight
1/2 cup coconut oil
1/4 cup agave syrup
1 vanilla pod, split and seeds added
1 lemon juice and zest
Top:
Leave half of the middle layer in the blender then add the below ingredients depending on which bar you want to make.

TOPPINGS
BERRY AND LEMON
Delicious and fresh! Using hedgerow fruits and a zing of lemon
Top:
1/4 cup blackberries
1/4 cup elderberries
Or 1/2 cup of any berry of choice
Lemon zest to decorate

COCOA AND PECAN
Classic chocolate and nuts! Raw cocoa nibs mix with sweet pecans a real classic redefined.
Top: add 1/4 cup cocoa nibs and top with pecans

BLUEBERRY AND LIME
Berry and citrus blast. A fresh and clean fruit hit.
Top: Juice and zest of 1 lime
1/4 cup blueberries, do not blend, keep whole and put between middle and top layer
Edible flowers to decorate.

 

METHOD
Cling film a 20cm square tin/tupperware. A round cake tin would work great too if making a whole dessert.
Base: In a blender add all base ingredients and blend well until add ingredients are small and mixture starts to come together.
Press into the container and use the back of a spoon to smooth down.
Chill for a few hours or pop in freezer while making next layers.
Middle: blitz all ingredients until the mixture turns to a thick and smooth consistency. Take out half mixture and press smooth out onto base layer. Leave the rest of the mixture in blender to have top ingredients added. Chill again.
Top: to the remaining middle mix add top ingredients and blend until combined. Add top layer to chilled container of base and middle, scatter any whole ingredients such as berries onto middle before adding top layer. Decorate as desired. Chill overnight.
Remove from container and cut into bars or bites, depending on what you want.
