Bake Love is into gains and we’re talking protein!

The lovelies over at BARSPUN have asked me to create healthy, delicious dishes for the weightlifting and barbell community. BARSPUN  are shaped by the bar, and they get shaped by eating right and lifting heavy.

BARSPUN Clothing and their lifting ambassadors provided eating plans, outlining what their main meals include. They consist of high protein and lower carb meals, especially before competitions.

This is where I started out, plus I put my Bake Love spin on it.
I am a big fan of mixing sweet and savoury. Peanut butter and jam, Pancakes and bacon, yep, it’s all good!
I wanted to have this flavour combination, but also use clean, healthy proteins.
Then I thought of that American south soul classic chicken and waffles.
I know what you’re thinking! That’s grease laden fried chicken and sugar loaded! Not this version!
This is lean, protein packed and deliciously balanced.

Chicken Waffles
Prep time 10 minutes
Cook time 10-15 minutes
Serves one
Provides approx 40g per portion before adding protein powder.
Eat in the mornings or post workout. Use a small amount of natural syrup, such as honey or agave to sweeten. Bacon and breadcrumbs are optional, depending on how strict you are being. Breadcrumbs add a very crisp outer bite and not too much is used here. You could always experiment with finely almost powdered oats and nuts as a coating.

Ingredients
1 chicken breast, raw,  roughly chopped
1 egg
½ scoop of protein powder
Seasoning, a pinch of salt and pepper
2-4 tablespoons of breadcrumbs – optional
2 tablespoons of honey or agave nectar to sweeten- optional
2 rashers of bacon – optional

Method
In a blender, blend chicken breast, the egg and season. Blend until smooth.
Split mix into our portions and roll in breadcrumbs.
Heat waffle maker.
Flatten slightly and place the breadcrumbed patties into the middle of the waffles squares. Close lid, as per waffle maker instructions and allow to cook for 5-6 minutes.
Once cooked pop out, top with cooked bacon, and drizzle with honey or agave nectar.
Really simply and delicious.
Full of healthy, lean protein and a great take on chicken and waffles.
I will also be experimenting with a vegan version, using chickpeas so please do stay tuned.
